Pasta started out as a relatively simple mixture of water and flour that was allowed to dry so that it could be stored and used later. However, the modern manufacturing techniques--especially the use of powerful extruding machines--have created an abundance of different shapes and styles of pasta. The enormous acceptance of pasta as a widely used food source also created a demand for new flavors and combinations of shapes. The result is an extraordinary variety of pasta shapes and types.
